Meet The Chef - Jaideep Kanungoe - Red Rhino Craft Brewery + Inspired Kitchen Patron Chef
Chef Jaideep Kanungoe is a progressive minded chef with a 21-year career in hotels and up-scale restaurants, both in India and abroad. Chef Jaideep last headed a multi-outlet culinary operation at Windmills craftworks, Bengaluru. A firm believer in seasonal and local ingredient-based cooking, Jaideep is inspired by fresh ingredients and global flavours adapted locally.
Jaideep’s varied experience includes the Oberoi hotels, The Park hotels, Accorhotels and a short stint with royal Caribbean cruise lines. Jaideep is formally trained in regional Italian and Mediterranean cuisine, with a certification from ICIF, Italy among many others. Jaideep is an avid reader and counts travel, music and sport among his favourite past-times, apart from food and cooking. Jaideep is a firm believer and a strong proponent of sustainable farming, procurement and cooking and uses seasonal and hyper-local produce in his menus.
Jaideep is adept at various international cuisines, however his latest project has been to travel and research local and regional cooking and food, and incorporate these influences in his menus. He brings the same influences to the menu offerings at RR, focusing on international favorites and hyper-local/micro-regional food influences with a strong accent on sustainability and seasonality.
